This is a wonderful dish to prepare ahead and take along for a picnic or woodland outing. 

1-1/4 cups bulgar wheat                         Boil liquid and pour over bulgar.  Cover and let sit until liquid is absorbed.

2 cups water or veggie stock                  about 1/2 hour or so.  cunky dice veggies and add to bulgar.  Add lemon

3 medium tomatoes                                oil, salt and pepper and mix well.  Serve with hummus and pita bread.

1-1/4 cups fresh parsley                          Hummus can be found in most grocery stores at the deli counter.  If

1/4 cup fresh mint (or to taste)'               you have a good food processor, you can make your own. 

1 cucumber

1/2 green pepper

1/2 cup lemon juice

1/4 cup olive oil

salt and pepper to taste.
