Hummis

2 cups cooked chickpeas (one can)

1-2 cloves garlic

6 tbsp lemon juice

1/3 cup tahini.

Put all ingredients in a blender or food processor and blend until smooth.  If you are unable to get the mash smooth, slowly add some olive oil until smoothness in obtained.  This is great served as a dip with fresh veggies, crackers, etc.  I always serve this with tabouli and pita bread. 

Interesting additions are:

10 sun dried tomatoes (in oil)

4-6 pieces canned roasted red pepper. 

Just put one or both of these in the blender with the rest of the ingredients and blend until smooth.
