My daughter sent me this recipe. It is simple and delicious.
1 eggplant peeled and diced Saute veggies in oil until soft. Add vinegar. Add tomato
2-3 zucchini diced until mixture is wet and cook for about 10 minutes. Add basil, salt
1 small green pepper diced and pepper. Cook until basil is wilted. Serve over whole cooked
3 cloves garlic minced grain such as brown basmati rice, quinoa or bulgar.
1/5 cup white or red wine vinegar
1, 15 oz. can diced tomato
1/2 cup fresh basil chopped
Salt and pepper
